De algunos a\u00fan no os he hablado, todo llegar\u00e1. De otros s\u00ed, entre ellos, mi pr\u00f3ximo libro con <a href=\"http:\/\/www.edicionesurano.es\/es-es\/catalogo\/catalogos\/ficha-tecnica.html?id=001000450\" target=\"_blank\" rel=\"noopener\">Ediciones Urano<\/a>, que se publicar\u00e1 para principios de oto\u00f1o de este a\u00f1o 2017 \u2014a\u00fan no hay fecha exacta de salida; pero no os preocup\u00e9is porque os avisar\u00e9 en cuanto lo sepa\u2014 . Como en <a href=\"http:\/\/www.edicionesurano.es\/es-es\/catalogo\/catalogos\/ficha-tecnica.html?id=001000450\" target=\"_blank\" rel=\"noopener\">mi primer libro<\/a>, no s\u00f3lo he escrito el texto, desarrollado y elaborado las recetas, hecho el <em>styling<\/em> de las fotos, la fotograf\u00eda y tambi\u00e9n \u00a0las ilustraciones. As\u00ed que con s\u00f3lo esto ya me pod\u00e9is imaginar como mujer orquesta entre la cocina y el estudio. \u00a1Qu\u00e9 intenso trabajo! Pero tambi\u00e9n qu\u00e9 gratificante. En estos momentos, el libro est\u00e1 en manos de <a href=\"https:\/\/www.instagram.com\/twice_design\/\" target=\"_blank\" rel=\"noopener\">Twice Design<\/a>, el mismo estudio que maquet\u00f3 mi primer libro <a href=\"http:\/\/www.edicionesurano.es\/es-es\/catalogo\/catalogos\/ficha-tecnica.html?id=001000450\" target=\"_blank\" rel=\"noopener\"><em>Raw Food Anti-aging<\/em><\/a>; y os cuento que ya he visto las primeras p\u00e1ginas y est\u00e1 quedando precioso.<\/p>\n<p>Como imaginar\u00e9is, con todo este trabajo, ya estaba empezando a notar que por fin tocaba hacer un pausa. Qu\u00e9 suerte que haya coincidido con las vacaciones de verano, as\u00ed he podido desconectar y respirar aires nuevos durante unos d\u00edas. Y de de eso os vengo a hablar, de mi corta pero feliz desconexi\u00f3n: mi estancia en B\u00e9lgica.<\/p>\n<p>La verdad es que empiezo a tomarle el gusto a irme a climas m\u00e1s fr\u00edos en agosto, el calor en Barcelona puede ser excesivo en este mes. Subir un poquito en la geograf\u00eda ya te pide una manga larga fina como m\u00ednimo, y la luz y el tiempo son fant\u00e1sticos por estas fechas, como el inicio de primavera en el mediterr\u00e1neo.<\/p>\n<p>En B\u00e9lgica ya hab\u00eda estado antes, en la bella Amberes y la cosmopolita Bruselas; as\u00ed que ya sab\u00eda que estos d\u00edas iban a ser fenomenales, adoro estas tierras y su cultura. M\u00e1s a\u00fan cuando uno de mis puntos de destino, la industriosa Gante, se ha ganado recientemente el t\u00edtulo de la capital vegana de Europa con sus innumerables negocios dedicados al consumo y venta de vegetales bio, y su jueves vegano, el d\u00eda en el que todos los negocios que ofrecen comida al p\u00fablico deben tener como m\u00ednimo una opci\u00f3n vegana; en la ciudad se respira una consciencia sobre la sostenibilidad y el respeto al medioambiente admirable. Obvio que no es todo un panorama ideal de verdes y gentes responsables, tambi\u00e9n abundan los negocios que promueven la alimentaci\u00f3n nada saludable ni sostenible \u2014chocolates, bombones, pralin\u00e9s seguramente deliciosos y fin\u00edsimos preparados con los ingredientes menos recomendables y refinados; las frituras son el<em>\u00a0fast food <\/em>tradicional; l\u00e1cteos en abundancia, etc.; y, entre otras chucher\u00edas procesadas, panes dulces, panqueques, mazapanes, nougats, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Cuberdon\" target=\"_blank\" rel=\"noopener\"><em>cuberdons<\/em><\/a> o <em>waffles<\/em>, de estos \u00faltimos, los ganteses fueron los inventores\u2014.<\/p>\n<p>Sin embargo, es cierto que hacen honor al t\u00edtulo que ostentan; y como el belga en su belgitud es de car\u00e1cter perfeccionista y meticuloso \u2014y muy fino\u2014, de capital europea vegana han pasado a autootorgarse el t\u00edtulo de la capital mundial del veganismo. \u00bfHabr\u00eda que hacer un estudio para ver si tienen raz\u00f3n? Puede ser, pero si no lo son, seguro que se quedan muy cerca.<\/p>\n<p>Como visitante reincidente y fugaz, te contar\u00e9 mi experiencia de unos pocos d\u00edas y los sitios que me llamaron la atenci\u00f3n, algunos de los lugares adonde fui; no te preocupes, no te voy a explicar aqu\u00ed las maravillas de su urbanismo y su arquitectura tradicional y contempor\u00e1nea, o el amor que profeso por la luz y la simbolog\u00eda de las pinturas\u00a0de los maestros primitivos flamencos \u2014\u00a1visita obligada a los museos y las iglesias!\u2014. Lo podemos dejar para otro d\u00eda, \u00a1ja! Mientras tanto, \u00bfqu\u00e9 me dices? \u00bfTe vienes de viaje conmigo?<\/p>\n<p>La primera cosa a tener en cuenta para alguien que viene de la Europa del sur es organizarse de manera pr\u00e1ctica las comidas: hay que acostumbrarse a los horarios belgas, se empieza a comer a las 12h y a las 14h ya est\u00e1n casi todas las cocinas \u2014y mayor\u00eda de negocios\u2014 cerradas, para abrir por la tarde de nuevo y cerrar a las 20h, algunos incluso a las 19h. \u00a1Qu\u00e9 civilizado! \u00bfVerdad? Aunque como los restaurantes de comida india abundan en Gante, no dudamos y entramos en un restaurante indio cercano a la estaci\u00f3n, donde no fue nada dif\u00edcil salir del paso con una ensalada un poco sosa de pepino, tomate, lechuga y una serie de esas salsas s\u00faper especiadas tan ricas que puedes encontrar en cualquier restaurant hind\u00fa. El primer d\u00eda de llegar a un sitio, con el despiste t\u00edpico del reci\u00e9n llegado, uno acaba comiendo mal y a deshora, pero feliz; al menos conseguimos no pasar por este tr\u00e1mite.<\/p>\n<p>La comida en restaurante indio fue muy frugal, mejor as\u00ed, y despu\u00e9s de dejar maletas en el hotel y apresurarnos a recorrer la ciudad, me alegr\u00f3 no sab\u00e9is cu\u00e1nto encontrar, sin buscar, un caf\u00e9 bar sencillo pero con una filosof\u00eda muy en sinton\u00eda y con precios aceptables, <a href=\"http:\/\/www.greenway.be\/en\/retail\/story\" target=\"_blank\" rel=\"noopener\"><em>Green Way<\/em><\/a>, tambi\u00e9n con locales en Amberes, Bruselas y Leuven, y que desde 1996 ha contribuido a la divulgaci\u00f3n de la filosof\u00eda vegetariana a trav\u00e9s de la cocina creativa y saludable en B\u00e9lgica. Es un sitio informal, correcto, con zumos del d\u00eda, sopas, arroces, burgers y rollitos, con dulces tentadores vegetarianos (\u00e9stos pueden incluir l\u00e1cteos) y tambi\u00e9n veganos. Y, <em>voil\u00e1<\/em>, otro regalo m\u00e1s en el camino, sin buscar si quiera, como quien sale al paso, apareci\u00f3 una de las tienditas de <a href=\"http:\/\/www.ayuno.be\" target=\"_blank\" rel=\"noopener\">Ayuno<\/a>, tienda de productos naturales, todo bio, con frutas, verduras, semillas, frutos secos y m\u00e1s all\u00e1; \u00a0opciones para todos. \u00bfQu\u00e9 compr\u00e9 para llevar conmigo? Pues una mezcla de frutos secos y semillas, con bastantes nueces, todo crudo, mi <em>snack<\/em> favorito; y aunque no fuesen activadas, unos d\u00edas son unos d\u00edas. Y as\u00ed calle tras calle, una curiosa combinaci\u00f3n de oferta de alimentaci\u00f3n saludable, consciente y actitud sostenible con otra de dudoso beneficio para la salud.<\/p>\n<p>El primer restaurante que me enamor\u00f3 fue Panda, un vegetariano bio con s\u00faper tienda, restaurant interior y terracita con vistas al canal Leie que a\u00fan ba\u00f1aban los \u00faltimos rayitos de sol a la temprana hora de la cena. Supongo que de haberme quedado m\u00e1s d\u00edas, hubiese vuelto con tal de sentarme a la misma mesa, al lado del letrero que anunciaba &#8220;paseos en barca sostenibles por los canales de Gante&#8221;, donde esperaba amarrada una s\u00faper canoa con cojines y un remero de rasgos orientales que la engalanaba con farolillos de velas para la noche. Aunque teniendo en cuenta el viaje agotador del d\u00eda anterior y que iba a estar la ma\u00f1ana en ayuno, como de costumbre, parec\u00eda una hora bastante razonable. De entrada discreta, es un caser\u00edo enorme con tierras donde cultivan parte de los alimentos que luego preparan para sus degustaciones. Precioso. El local es precioso, reci\u00e9n renovado y lleno de detalles encantadores. Para mi criterio, ning\u00fan chocolate decente, y la tienda un delirio de tres plantas que acababa en un peque\u00f1o caf\u00e9 degustaci\u00f3n y que me hizo sonre\u00edr; se avistaba desde la terraza del Leffe, con su fachada llena de nubes rosas y un letrero que anunciaba <em>Les r\u00eaves de Pierre<\/em>. \u00bfPor qu\u00e9 le ponen tantas porquer\u00edas al chocolate? Realmente no merece la pena, por muy bello que se vea con sus colores imposibles y sus texturas inimaginables.<\/p><\/div>\n<p>En Bruselas, no busqu\u00e9, pero top\u00e9 con una<a href=\"https:\/\/www.facebook.com\/Samahuma-Brussels-Juice-Superfood-696147273900943\/\" target=\"_blank\" rel=\"noopener\"> tienda\u2013bar <\/a>que no me emocion\u00f3 mucho y ofrec\u00eda zumos <em>cold-pressed<\/em>\u00a0guardados en botellas de pl\u00e1stico \u2014un poco descoloridos\u2014 y superalimentos. Mie Vie tambi\u00e9n me enamor\u00f3 con su comida casera reci\u00e9n preparada, sus raciones generosas, sus precios asequibles y todo el amor que se respiraba en el peque\u00f1o local.
